Avocado Cabbage Slaw


Try this quick and easy vegetarian recipe.

INGREDIENTS

  • ½ Green cabbage
  • 1 Thai Red chilli
  • 1 large Avocado
  • 5 Red radishes
  • ½ small Red onion
  • 1 juicy Lime
  • Sea salt (to taste)
  • ¼ cup crumbled Feta cheese
  • 1 small bunch of Cilantro


METHOD

  1. Shred cabbage by hand or with food processor
  2. Cube avocado, mince Chilli
  3. Slice radishes and red onion thinly
  4. Combine all vegetables in a bowl
  5. Dress with lime juice and season with sea salt
  6. Taste and adjust. Slaw should be very punchy in flavour
  7. Sprinkle with crumbled feta [cheese and cilantro]


NOTE:
serve with grilled meat, or in a breakfast wrap with scrambled eggs and salsa
